Ethiopia a very good guess. I'm not sure, but I think I might even have seen Dulecha cross herself as she was approaching the line.

But az2 is right: twas the Russians (at least the women). Invariably seemed to cross themselves.

The Coptic Church is very big in Ethiopia. @ WCCC I've seen every Ethiopian cross themselves atleast twice upon crossing the finishing line.

Speaking of religion (which is OK in this context because it's not about dogma): in watching athletes during introductions in Budapest, one nation's athletes crossed themselves more than all other nations combined (gh observation; not a provable stat).

Which country would that be?

The video boards had some good stuff (an aside: production was by Magyar Television, for which the logo everywhere is.... MTV!).

They'd celebrate each winner by showing some action of them, then sometimes freezing a still image, with about a 30% screen of the national flag in the background.

So when they get to Christian Olsson, they choose a pose of him exulting in victory, hands shot over his head, except that at the moment of capture they weren't exactly over his head. Think more like a 45-degree angle. And then they put the Swedish flag behind him, with its cross, and his head is about where the angles coincide, putting his wrists right on the crosspiece...... Mel Gibson woulda loved it I guess.
