I would pair the ham with mustard and the swiss cheese with mayo and here's why.
Ham goes quite well with a spicy mustard. The ham offers more of a mellow taste when compared to a swiss cheese and the mustard kicks it up in the taste department. People put mustard on their Easter ham for God Sakes!
Swiss cheese can be a little strong and a nice cold dollop on mayo on its ass will tame it a bit.

or NY White if grilling.
a tad of Bavarian sweet style mustard for ham side- note the a tad part
86% Butterfat Butter for the chesse side if eating cold- if grilling in a lowheat cast iron Lodge pan omit inside butter and use normal supermkt 80% brand on the outsideof the thick sliced white
