<<Julia Child, goddess of fat, is beaming somewhere. Butter is back, and when you’re looking for a few chunks of pork for a stew, you can resume searching for the best pieces — the ones with the most fat…>>

Exhibit ZZ999ZZZ that you can find whatever you want on the 'net.

    To paraphrase:

"Fat, for want of a better word, is good."

No, it's not that at all. It's yet another indicator that any attempt to define what is "healthy" based on one component of a food (e.g., fat, salt, vitamin X, etc.), is unlikely to be do much good.

The Michael Pollan quote remains the best advice ("Eat food. Not too much. Mostly plants.").

For the life of me I'll never understand the idea of any of the following:
      1) Skim milk
      2) boneless, skinless chicken breasts
      3) "fat free" anything (that is supposed to have fat)

Easy! They are all intended to render the food/drink so unflavorful you'll eat/drink less and think you've done yourself a favor. Best thing I've done this year is move to diet sodas which taste so bad there is zero chance I'll indulge in my binge-(Pepsi-)drinking of the past. Lost close to 10 pounds so far this year.
